What's the best vegetarian breakfast?
In winter I have cooked oats (oatmeal) and in summer muesli (which I make myself with shop bought ingredients), both with 'light' soy milk and no added sugar.
Plus, usually I have a glass of soy milk, or occasionally a glass of orange juice.
On Sundays I also indulge myself with a freshly brewed coffee as well.
Reading some of the questions and answers here has got me wondering ~ is there a better alternative?
I'm 'mature' and need something that will carry me through a long drive to work and until lunch time, plus give a little energy boost!
Ideas and reasons would be very greatly appreciated :-)

Some of these products aren't familiar to me here in Australia ~ could someone let me know what 'Eggbeaters' are?
I've looked and can't find them at the health food shop or supermarket (we've got a big Indian population in my area, so LOTS of veggie alternatives at our local supermarket).
Ummmmm ... Lenny, I think you might have missed the concept of vegetarian, lol ...

Quinoa....cooks exactly like rice...BUT is a complete protein and its a whole grain...can you get any better than that????
It can be cooked like cereal...it can be added to stir fried veggies... it is soooo versatile!! AND it tastes great!!

How about a cup of Fiber One cereal, with a cup of Silk Vanilla Soy Milk and banana slices in it? Yum!

A veggie omelet, but instead of eggs use egg beaters. I hate eggs but I had this once and it was good, now that's the only omelet I like having x-tra mushrooms and bell peppers.

I'm not a vegetarian .. BUT ... I think one meal you could have for breakfast would be .. a large serve of scrambled eggs served on buttered wholemeal toast with fried mushrooms, tomato and a little steamed spinach (NOT SILVERBEET .. bleaghhhhhhhhh)... and a glass of apple,lemon,beetroot and carrot juice .. (SOUNDS GROSS .. but is really refreshing and jammed packed with *good stuff* )

I add some greens to breakfast--spinach is an example.
It helps to keep my blood sugar steady when I eat fruit or drink fruit juice after getting up.

Giant mushrooms, pan roasted whole with garlic and white wine, served on a thick slice of toast.

Scramble Tofu! I swear I am converted! serve it on a hot buttered bagel and you will fly to work...
Oh! and sometimes I have oatmeal served with apple sauce.
I adore Kashi crunch cereal with vanilla soy milk AND ...stonyfield farm soy yoghurt is the bomb! thats it..

My fav breakfast is biscuits and gravy (using soymilk) with boca sausage patties crumbled up in the gravy, orange juice, and a few strips of morning star bacon.
I also enjoy taking tortilla shells and filling them with sargentos cheese (rennet less cheese), free range eggs (or eggs that i get from my friend's chickens), and crumbled up pieces of boca sausage patties and heating it up in the microwave.
