would is a hypothetical (it is obvious that you do not know right now, or you would have said "how do you know"). How would you know is "what do you need to see or make happen before you can know?"
How do you know=you know right now, you DO know, so what is the reason that you know?

By using would, it indicates if you had the opportunity. In contrast, do means you have had the opportunity and appear to know.
