What's your favourite vegetarian quiche lorraine-ish recipe?
I'm craving quiche lorraine, and I'm wondering how I could adapt the recipe other than just using fake bacon bits. Maybe mushrooms, or smoked tofu? What do you use for your best cream, eggs, onions and something quiche?

Broccoli-cheddar quiche
Mushroom-green onion quiche
Traditionally quiche is made with gruyere cheese. Although Swiss cheese comes close to gruyere in taste.
You can add some cheddar, or substitute all for cheddar cheese.
I don't use cream. I use homo milk or 2% milk.
Cream is very high in fats, and in some recipes it actually coats the tongue in an unpleasant way. Especially when eating a left-over made with cream.

I haven't found myself needed to go to bacon fake bits. As odd as it may sound if I really needed to eat some bacon, a very healthy pig using natural curing techniques I consider healthier than soy products that are 90% GMO.
Options:
o sweet white onions
o minced, fresh garlic
o cilantro, or milder parsley
o red/yellow/orange bell peppers
o for some kick, finely diced jalapenos
o fresh basil
For adding flavor to the eggs:
o fresh ground black pepper
o dried herbs: oregano, basil, powdered rosemary
o red pepper flakes or cayenne, hot sauce, just a pinch will warm it
o nutritional yeast (cheese sub)
o whisk these into the egg prior to cooking
If you want fluffier eggs, whisk in 1/2 tsp water per egg. Creamier, use milk.
Basic cooking:
o bake crust until done
o saute any veggies you want cooked more than fairly fresh
o add whisked eggs and the rest of veggies
o scramble until 3/4 done, add to pie crust
o optional: grate or sprinkle cheese on top
o bake until egg is set
