How warm should water be when we add yeast?
My father and I have had little luck when trying to make cinnamon rolls. We will put together the ingredients and come back an hour later to not see it rising! I have all the nessicary tips except for one. I have a recipe that says "1. Put yeast in warm water. Let stand 5 minutes or until foamy." But I dont know how warm, warm is! I know that too hot will kill the yeast, and too cold wont activate it. We have a cooking thermometer so seeing how hot it is wont be a problem. Thanks in advance.

The water should be between 100 and 110 degrees fahrenheit. If you exceed 120, you will kill the yeast, so 110 is a safe temperature with a good buffer before you hit 120.
You may be having trouble too because the yeast may be too old. Yeast do have a shelf life and an expiration date.
To test the yeast...dissolve it in the warm water for your recipe AND one teaspoon of sugar. Let it rest for about 5-10 minutes. If the yeast doesn't start getting foamy by then, then your yeast is probably expired or dead.

With a thermometer, you want the water to be between 100 and 110 degrees.
Without a thermometer, it is still easy enough. All you have to do is test the water against your wrist, just like you would a bottle or bath water for a baby.
The human body is 98 degrees, give a take a few tenths. Water at 98 degrees will feel wet, but neither cold nor warm. Water at 110, the top range for a good yeast yield, will feel warm to the wrist.
Make sure you wait a minute, or change wrists, before testing a sample that doesn't seem right.

yeast grows optimally around 30-35 or 37 degrees Celsius. (depends on the species).
Below 30 its grow slows down dramatically and when you get below about 10 it really doesn't grow much at all.
If you get much above 40 it won't grow at all. At high temperatures (>50 C) the cells die.

Around 110°F-115°F
Add required Sugar and little Salt. This will keep the fermentation process balanced.
