Hey I agreed with Victorga. You should not be cooking it. Thought the Chinese celery is normally way too harsh to eat raw, the Chinese would cook the Chinese celery but not so fast that the inside is not thoroughly cooked. It gets slightly cooked and still retains its bite.

Chinese celery is popular in Chinese stir-fry and soup. It's very common use as a flavor for the dishes. I think you can use it in many different ways, it pretty much depent on how well you know of how to use it. If you ever get chance, try "Creamy Chinese Celery Soup" it's very good. And also, celery seed can be use into foods when the "crunch" of celery is not desired. Chinese celery tastes similar to regular celery, but stronger flavor. It have a lots of health benefits. Chinese medicine values this vegetable for treating high blood pressure, especially in the early stages. It provides low-calorie and fiber bulk. Celery is from the same plant family as carrots, parsley, fennel and caraway. I'd say go ahead plant it. My mom plant Chinese celery in her garden. It grow fast and best in mild climates during spring and fall. Enjoy! Have a lovely day and God bless you =]

It is call yan sui in mandarin.

You can use to flavor chinese soups and soups with noodles.

Cut them into small pieces and throw into a bowl of instant noodle with soup. You should not be cooking them.

It taste great with shark fin soup too.

Any chinese receipe that calls for spring onions you can replace with yan sui. Eg stir fry pig liver with spring onion

I think you're talking about Bok Choy, and it's just like any other vegetable, you have to cook it. Cooking methods generally include stir-frying for Oriental foods.
